Head Chef Michał Sawaryn is originally from the beautiful town of Gdańsk, which sits on the Baltic coast of Poland.
From an early age Michal showed an interest in cookery, helping his beloved Auntie Danuta prepare breakfasts for the whole family. Upon realising his natural aptitude for cookery his family encouraged Michal to attend catering school, which he did for seven years. Whilst attending catering school he acquired his first role in the kitchen, starting out as Commis Chef under the watchful eye of Bozena Stankiewicz at ‘Hotel Dal’, a hotel next to the sea. During this period he refined his knowledge of Polish cuisine, quickly rising to the position of Senior Sous Chef.
In 2007 inspired by the legendary cuisine of Michel Roux, Michal decided to travel to England. He embarked upon a gastronomic odyssey educating himself about the very best of French and English food via a number fine dining and AA Rosette restaurants.
Michał is a passionate, enthusiastic and talented Head Chef who uses fresh seasonal produce from local suppliers and farms so our guests can expect exciting flavours showcasing the best of Yorkshire cuisine with a European flavour
Settled in Harrogate with his wife, Aleksandra and 3 children, Michal enjoys indulging his passion for cars and keeps fit by practising martial arts.
